Chapter 3: Dubai's Most "Delicious" Hotel (1)
Board a shuttle boat from the bar lounge "Jetty Lounge" at "One&Only Royal Mirage" and arrive at "One&Only The Palm" on Palm Jumeirah in just a few minutes. While also part of the One&Only collection, this resort, with its expansive private spaces, is more popular with couples than families. What lies within this establishment, hailed as Dubai's ultimate luxury beach resort?

Prime Location x Perfect Privacy
Palm Jumeirah is the world's largest artificial island, one of three artificial islands known as the Palm Islands, designed to resemble a palm tree. Developed for luxury residences, villas, and hotels, this island gained attention when the Beckham family and Bill Gates purchased villas here. Following the completion of Atlantis, The Palm in 2008, a succession of world-renowned brand hotels have opened on Palm Jumeirah.
Located at the southwestern tip of the crescent-shaped breakwater, which encircles the palm tree and is close to the mainland, is "One&Only The Palm." Upon its opening in 2010, it garnered attention as Dubai's ultimate luxury beach resort. While boasting a prime location with views of Dubai's dynamic skyline, it is a stylish, contemporary luxury resort enveloped in perfect privacy and tranquility.
A private white-sand beach stretches out before you, and while the expansive grounds are surrounded by beautiful gardens, it is a boutique resort comprising only 90 guest rooms and 4 private beach villas. The contemporary and chic design, harmonizing Moorish, Spanish, Andalusian, and Arabian styles, evokes the feeling of a luxurious private villa. The main building is a three-story manor house with 34 rooms (minimum size 65 sqm). The low-rise apartment buildings, comprising 6 blocks, house 56 rooms, and the 4 private beach villas, each with 2 bedrooms (325 sqm) or 3 bedrooms (425 sqm), come with a lap pool.
Despite it not being peak season, there were only a few vacancies. We were able to see the Grand Palm Suite, the largest suite in the manor house at 250 sqm. From the suite's expansive balcony, the poolside lounge area and the shimmering pool are viewed directly ahead. The overly spacious living room, with its sofas and dining area meant for relaxation, might initially seem overwhelming in its grandeur, but it feels surprisingly comfortable, truly like a luxurious private villa.
Why it's Popular with Couples
While the Private Beach Villas can be booked for a minimum of three or four nights depending on the season, many guests actually stay for extended periods of two to three weeks. Compared to its sister resort, One&Only Royal Mirage, One&Only The Palm is characterized by a higher proportion of couples to families.
On either side of the swimming pool, palm trees line the area with daybeds, where many Europeans can be seen relaxing all day long. Unique are the private cabanas scattered around the pool area. More like small villa-sized independent structures than mere cabanas, they are fully equipped with air conditioning, a TV, a sofa, and a refrigerator stocked with drinks, complete with a porch area furnished with a large daybed. However, these are not first-come, first-served and come with a fee. For two people, it costs just under 50,000 yen on weekdays and just under 70,000 yen on weekends, making it not exactly inexpensive, but they are reportedly difficult to book. This is a testament to the high caliber of guests seeking luxury.
Further enhancing the exclusive experience are the One&Only Private Spa, Beauty Studio, and Fitness center. As with other One&Only resorts, the "Pedi: Mani: Cure Studio" by world-renowned podiatrist Bastien Gonzalez is highly popular. For those who wish to have the pool all to themselves, the swimming pool located between the spa and fitness center is recommended. With no daybeds, this is likely intended as a lap pool for serious swimmers. The spa, produced by Espa, features five treatment rooms and offers three- and five-day wellness-focused programs.

Three Exquisite Restaurants by a Three-Michelin-Star Chef
The culinary offerings at One&Only The Palm are another highlight not to be missed. Here, there are three restaurants – "101," "STAY," and "ZEST" – produced by the young genius chef Yannick Alléno. Alléno is a rising star chef who gained international recognition in his early thirties by leading Paris's "Hotel Le Meurice" to three Michelin stars in 2009. We would like to introduce them one by one.
"101" is adjacent to the jetty where shuttle boats arrive. This waterside restaurant offers delightful alfresco dining. A recommended dish here is the calamari salad with prosciutto, a chef's specialty. The dessert platter is also worth trying. In addition to lunch and dinner menus, a tapas menu is available, a perfect choice for sparkling wine enthusiasts. While enjoying tapas and bubbly at an alfresco table, a small cruiser was docked right beside us. We learned that it's a private boat from One&Only The Palm and can be chartered for approximately 47,000 yen per hour.
"ZEST," the all-day dining restaurant in the main building, offers Asian, Arabian, and European menus, allowing guests to enjoy a diverse range of meals by combining, for example, Asian appetizers, Arabian main courses, and European desserts. Spotting "Udon" on the menu, we decided to order it. It arrived in a Western-style broth with a poached egg and, indeed, udon noodles (though without a dashi broth). The breakfast buffet is also visually appealing, offering a wide variety of options, from healthy choices to hearty meals, allowing guests to customize their morning dining experience.
The highlight, however, is undoubtedly "STAY" by Yannick Alléno. This signature dining restaurant, available only for dinner, showcases meticulous attention to detail, such as the imposing marble floors with an earth-stone motif. The crystal ceiling creates a sophisticated dining ambiance, presenting traditional culinary techniques in a contemporary style. The total
Head Chef David Emmerle has a deep understanding of Japanese cuisine, and the menu features several dishes incorporating Japanese ingredients like yuzu and shiitake mushrooms, which brings a sense of delight. Incidentally, he is a well-known celebrity chef in Moscow. When asked, "Why Dubai?" he replied that he couldn't refuse when the respected Yannick Alléno invited him to lead the restaurants at One&Only The Palm, especially since he was aware of the reputation of other One&Only resorts.
The unique concept, the DNA of this restaurant, is also wonderfully embodied in the "Pastry Library" produced by young pastry chef Jamie Jameson. The Pastry Library is the dessert equivalent of an open kitchen, offering the ultimate in custom-made desserts. Guests select a few preferred sweets, and the pastry chef completes a dessert plate with stylish toppings based on the chosen ingredients. While a regular open kitchen merely allows you to watch the cooking process, the Pastry Library offers the delightful experience of co-creating your dessert. It's perfect for anniversary dinners where guests dress up and enjoy a celebratory meal. Staying at One&Only The Palm for an anniversary and dining at STAY by Yannick Alléno would be an ideal way to celebrate such an occasion.
