Hiramatso: 26 Chefs Offer a Symphony of Lobster, Spices, and Herbs

Across Hiramatso's nationwide hotels, restaurants, and cafes, a special menu themed "Lobster x Spices & Herbs" is available until Saturday, July 31, 2021. The offerings include signature dishes, pasta, and curries, each showcasing the unique culinary artistry of the chefs. All dishes are prepared in adherence to the "Hiramatsu Standard," the group's proprietary hygiene and safety protocols. Takeout and delivery services are also available at select locations.

Savor Chef-Crafted Dishes Inspired by "Individuality," "Tradition," and "Innovation"

From July 1 to July 31, 2021, Hiramatso's 22 restaurants and cafes, along with its 4 hotels across Japan, present "Hiramatso Through the Seasons: Lobster x Spices & Herbs." This special event features 26 chefs, each presenting a unique dish that harmonizes seasonal lobster with vibrant summer spices and herbs. Embracing the themes of "Individuality," "Tradition," and "Innovation," the chefs have crafted a diverse menu. From signature creations to refreshing cold dishes perfect for summer, and rich pasta and curry dishes brimming with lobster flavor, a wide array of distinctive culinary experiences awaits.
Born from the theme of "Innovation," these dishes represent Hiramatso's first-ever gourmet curry, created by Italian chefs. Driven by a desire to make the luxurious ingredient of lobster more accessible, the chefs combined it with the comforting flavors of spiced curry, a perfect match for the summer heat.
The chefs embarked on a culinary challenge: how to elevate lobster with the essence of Italian cuisine through curry? After much trial and error, two distinct curry creations emerged: "Spiced Curry" and "Green Curry." Initially planned as a single offering, the overwhelming feedback from staff who tasted both – "We can't choose, they're both delicious!" – led to the decision to offer both varieties.
The "Spiced Curry," generously infused with homemade lobster bisque, and the "Green Curry," featuring the kick of green chili peppers, are both tantalizing dishes that stimulate the appetite with the refreshing aroma of herbs and the rich, flavorful essence of lobster. Each bite offers a burst of lobster and vegetable umami, complemented by the satisfyingly plump texture of large lobster pieces. These curries are available at "Cafe Michelangelo Hiroo" in Minami-Azabu, Tokyo, with takeout and delivery options.

Embodying the theme of "Tradition," the "Lobster Salad À la Française" is a masterpiece. This exquisite specialty dish, a profound expression of the philosophy of simplicity and universality championed by Paul Bocuse, a luminary of modern French cuisine, is offered at two locations: "Maison Paul Bocuse" in Daikanyama, Tokyo, and "Jardin Paul Bocuse" in Kanazawa.
Under the banner of "Individuality," chefs at Hiramatso's 19 restaurants and 4 hotels have devised 23 unique and vibrant dishes featuring lobster, spices, and herbs. At "Argento" in Ginza, Tokyo, experience "Blue Lobster Consommé with Exotic Herbs," a chilled broth infused with lemongrass and ginger. "Daigo ASO Celeste Nihonbashi" in Nihonbashi, Tokyo, offers "Whole Sautéed Lobster with Homemade Americaine Sauce and Tagliatelle with Tomato," featuring a whole lobster atop house-made pasta. "Brasserie Paul Bocuse Ginza" presents a refreshing "Chilled Lobster with Ginger and Cauliflower Mousseline, accompanied by a Honey-Scented White Wine Jelly," a delicate composition of jellied lobster and mousse. Each establishment promises a one-of-a-kind culinary delight.
To ensure a safe and enjoyable dining experience, all locations strictly adhere to the "Hiramatsu Standard," a set of proprietary safety guidelines focusing on "hygiene management," "social distancing," and "ventilation."
