A One-Day Special Event Merging the World of Dom Pérignon Rosé Vintage 2008 with Gastronomy
MHD Moët Hennessy Diageo hosted an exclusive launch event for "Dom Pérignon Rosé Vintage 2008" this spring. On the day, a special food pairing course by Chef Yasuhiro Kawate of Florilège, which ranked third in the 2022 "Asia's 50 Best Restaurants," was offered, allowing guests to savor the fusion of the Dom Pérignon Rosé Vintage 2008's world and gastronomy.
A Rosé Clad in the "Red" of Pinot Noir, Capturing Strength and Vibrant Life Force
2008 was said to be an exceptionally unusual year for Champagne viticulture. While spring and summer were marked by insufficient sunlight and low temperatures, a miraculous shift occurred from September onwards with clear skies and wind, far exceeding expectations for grape maturation and resulting in a sound wine with a high level of balance.
The harmony of "Dom Pérignon Rosé Vintage 2008," born from a bold assemblage, has matured into a blend of the precision of a fuller-bodied wine and the tension created by its natural radiance. Its taste unfolds with an immediate bouquet of raspberry and wild strawberry, complemented by the aroma of violet, symbolizing the terroir of Hautvillers, while the acidity, clearly expressing the structure of Pinot Noir, defines the wine's lively character.
Regarding this rosé champagne, clad in the "red" of Pinot Noir, embodying strength and vibrant life force, Chef Kawate of Florilège commented, "I created dishes with a pairing concept that allows for personal discovery, rather than the conventional pairings you might expect."
True to his word, Chef Kawate created dishes for the day based on five concepts: "CHIAROSCURO," "UNTAMED & CARNAL," "MAGNETIC," "VIBRANT," and "TACTILE."
For "CHIAROSCURO," a mille-feuille of scallop, seaweed, ginger, and perilla was served with a sauce made from four distinct elements: ginger purée and juice, cream, and a juice fermented with daikon radish and whey, creating a visually stunning contrast.
In "VIBRANT," a Chinese-style roasted duck with oil and heat was accompanied by sides such as mountain pepper, cumin, coriander, and roasted carrots caramelized with sugar, embodying the fusion of gastronomy with the world of "Dom Pérignon Rosé Vintage 2008," which expresses freedom unbound by convention.
