Expressing the Painting's Shimmering Pearls and Striking Vermeer Blue on a Plate
"mesm Tokyo, Autograph Collection," the first collaboration between JR East Group and Marriott International, welcomes the second installment of "Afternoon Exhibition." Following Salvador Dalí's masterpiece "The Persistence of Memory," this new offering at "Whisk," the bar & lounge located on the 16th floor, features Johannes Vermeer's iconic work.
"Whisk," conceptualized as an artist's atelier, invites guests into an artistic world with "Afternoon Exhibition." The new "Pearl" offering, inspired by Vermeer's "Girl with a Pearl Earring," is a photogenic afternoon tea that sparks inspiration, incorporating elements from the painting such as the captivating gaze of the girl, the luster of pearls, and the striking Vermeer blue turban.
The first course includes scones served with mesm's original "paint tubes" and a quiche with bacon and Edam cheese from the Netherlands. The tubes contain two types of sauces: a tomato sauce made from "Hana Girl," a rare mini tomato with a rich sweetness, and maple jam. These are enjoyed with black olive scones and tea scones.
The pairing includes a fresh mocktail made with asparagus, "Hana Girl" tomatoes, and pistachio extract.
Next, a cake arrives, embodying the painting's world on a plate. Inspired by Tompoes, a traditional Dutch pastry from Vermeer's homeland, the cake is filled generously with elegant rose, blueberry, and raspberry creams, offering a delightful texture contrast with the outer mascarpone. A pearl candy conceals a fragrant sauce combining the tartness and sweetness of orange with the richness of butter. When combined with a crepe, it transforms into a "Crêpes Suzette," a classic French dessert.
The accompanying mocktail for this dish is a pineapple-based drink with a kick from ginger and pink peppercorns, providing a stimulating accent.
To conclude, enjoy an "artistic journey" with specialty coffee from Sarutahiko Coffee or a rich tea from Brew Tea Company. Spend a unique moment enveloped in the gentle spring light.
