SAKE HUNDRED Introduces Premium Sparkling 'SHINSEI'

Clear, which operates the Japanese sake business, launched its new sparkling Japanese sake product, 'SHINSEI | SHINSEI,' from its Japanese sake brand SAKE HUNDRED on Thursday, October 7, 2021.

This flavor will one day be known throughout the world, and surpass Champagne.

Its appearance is a brilliant crystal, with fine bubbles creating a festive atmosphere. The aroma is clean, with notes of white peach, Japanese pear, refreshing herbs, and white flowers. It has a smooth, dry mouthfeel. This is a profound sake that stimulates the five senses with its elegant and multi-layered flavor.
'SHINSEI' is brewed in partnership with Yamanashi Meijo, a brewery founded in 1750 (Kanei 3) in Yamanashi Prefecture. This brewery has honed its craft by utilizing the local water of Hakushu. The smooth, fresh taste of 'SHINSEI' originates from the soft water of the Kai-Komagatake mountains, drawn from Hakushu town.
The bubbles in 'SHINSEI,' symbolizing its name, rise beautifully in the glass like starlight adorning the night sky. These are natural bubbles generated during the secondary fermentation in the bottle, a process where the sake, after initial fermentation, has more unfiltered moromi added, reactivating the yeast. The fresh, silky mouthfeel enhances a variety of dishes.
While the typical ingredients for Japanese sake are 'water, rice, and koji,' 'SHINSEI' is made by adding Japanese sake instead of water to a portion of the mash. This brewing method, known as 're-fermentation,' results in a multi-layered, deep flavor rich in the essence of the sake.
Furthermore, the 'aftertaste' is essential for food pairing. The gentle acidity, umami, and pleasantly bitter minerality of 'SHINSEI' leave a long finish that complements the flavors of the meal until the very end.
