Alexandre Quillon, chef at "La Marine," which earned two Michelin stars in the 2013 guide, makes his first visit to Japan. He will present special collaborations with the chefs at "Ginza Okuda" and "ESqUISSE."

Chef Quillon, Renowned for Dishes Featuring Fresh Local Seafood
Alexandre Quillon (center) operates two restaurants on Noirmoutier Island, facing the Atlantic Ocean in southern Brittany. He is one of France's most talked-about chefs, specializing in fresh seafood.
For his debut in Japan, he will present dishes in collaboration with "ESqUISSE," a pioneer of modern French cuisine, and Toru Okuda, who opened "OKUDA," a Japanese restaurant in Paris last year, followed by "SUSHI OKUDA" this year.
"ESqUISSE" will host an exclusive special dinner on January 15th (Thursday) and 16th (Friday) only. Chef de Cuisine Lionel Beccat describes this dream collaboration as "a story of three seas' terroirs, and gazes cast upon reality and imagination."
The "Atlantic Ocean," the sea that nurtured Chef Alexandre Quillon; the "Mediterranean Sea," the hometown of Chef Lionel Beccat; and the "Pacific Ocean," Japan's sea, which provides the ingredients. Guests can savor exquisite dishes born from the geographical connections and contrasts of these three seas.
"Ginza Okuda" will offer lunch and dinner on January 18th (Sunday) only. Chef Alexandre Quillon, on his first visit to Japan, expresses a strong desire to visit Tsukiji Market. Expectations are high for this one-day-only special session, to see what Japanese fish he will select upon his first encounter at the market, what he will feel in a Japanese culinary kitchen, and how he will transform it into his cuisine.
Seating is limited at both venues, so reservations are essential. A special campaign offering a discount on the price is also available for those who attend both events.
