The Art of Deep Flavor: Savoring the Essence of Each Dish
Since opening Ukai Toriyama in 1964, Ukai has opened a variety of restaurants with diverse concepts in locations such as Hachioji, Omotesando, and Yokohama over the past half-century, and also operates the Hakone Glass Forest Museum.
The newly opened Ginza Kappou Ukai recreates the "Hojo no Ma" at Ukai Chitei in Okutaka, where guests can enjoy the chef's signature dishes across the counter, now in Ginza. It embodies the history, tradition, heart, and skill of Ukai. The interior, designed in a modern Sukiya-zukuri style, exudes an adult ambiance and features a large counter with 13 seats, a small counter with 9 seats, one private room, and two semi-private rooms, allowing guests to savor freshly prepared dishes with all five senses.
Weekdays are dinner-only. The main offering is the "Suki Nabe" (sukiyaki hot pot), which allows guests to enjoy the natural flavors of seasonal ingredients, with two options available: ¥17,280 and ¥19,440. The restaurant is also open for lunch on Saturdays and holidays, offering a lunch course for ¥5,400.
The world of "Bimi Hojo," where one perceives the grand narrative behind each dish and deeply savors its concentrated deliciousness. I am eager to slowly appreciate the many dishes created from the earnest gaze and skillful hands of the chefs.
