A steakhouse that charmed America with its meticulously prepared steaks makes its debut in Japan. "Wolfgang's Steakhouse by Wolfgang Zwiener" will open on Saturday, February 1st, on Toriizaka in Roppongi.

Tender, Umami-Rich "Dry-Aged Steak"
Wolfgang's Steakhouse by Wolfgang Zwiener, renowned as an "ultimate steakhouse" with immense popularity in New York, Beverly Hills, and Waikiki, has chosen Tokyo's Roppongi, also known as a culinary capital, for its first location outside the United States.
Wolfgang's Steakhouse was founded in 2004 by Wolfgang Zwiener, who spent 41 years as head waiter at the prestigious Peter Luger Steak House, established in 1887 in Brooklyn, New York. It quickly captivated New Yorkers and now operates seven locations within the United States.
The secret to its flavor lies in sourcing only "Prime Grade" beef, certified as the highest quality by the U.S. Department of Agriculture, and then slowly dry-aging it for extended periods in a dedicated aging room. During this process, the meat's natural enzymes work to tenderize it, while proteins break down, increasing the umami-rich amino acids.
This long-term dry-aging process tenderizes the meat and enhances its umami. When cut thick and seared in a 900-degree oven, the steak develops a crisp, fragrant exterior while its juices burst forth from within, creating a truly special dish.
In addition to the T-bone, which allows you to enjoy both sirloin and filet in one cut, the menu also features sirloin, filet, and ribeye steaks. A selection of seafood, including lobster and oysters, as well as side dishes that perfectly complement the steaks, are also available.
The approximately 660-square-meter interior boasts a sophisticated, classical, and elegant ambiance, with 178 seats spread across dining areas, private rooms, and a bar. A glass-enclosed walk-in wine cellar stocking 1,000 bottles further enhances the experience, creating a moment of bliss for enjoying steak.
The dry-aged steak, which has captured the hearts of Americans, is now available in Japan. It's an opportunity to savor America's proud, juicy steak to your heart's content.
