The chef, who has dedicated over 20 years to mastering Japanese cuisine in the Kansai region, has now opened his first Tokyo establishment under the new banner of a "Japanese restaurant run by a couple." The cuisine maximizes the natural flavors of ingredients, the heart of Japanese cooking, using carefully selected items like "Iwaya leeks," considered one of Japan's three great leeks, and sweet, fluffy potatoes from Sapporo. Notably, the menu features creative dishes found nowhere else, such as miso cutlets and "Uni Sushi with Shisou Beef," made with juicy, tender "Shisou Beef," which is particularly rare in the Kanto region.
