Cuisine[s] Michel Troisgros introduces a special menu that delves into the allure of black truffles. Following the "White Truffle Fair" held until mid-December, guests can now indulge in dishes featuring seasonal black truffles.

Japan and France: A Harmonious Blend of Seasonal Ingredients





Cuisine[s] Michel Troisgros, the sole overseas restaurant bearing the name of Michel Troisgros—the third-generation owner-chef of the three-Michelin-starred "Maison Troisgros"—appointed Guillaume Bracaval as its executive chef in August 2012. Bracaval honed his skills at renowned three-Michelin-starred restaurants in Paris. The restaurant's cuisine, a fusion of French and Japanese flavors, is both classic and innovative, capturing the attention of gourmands.

For the special black truffle menu, available from the New Year, Guillaume Bracaval, who intimately understands the essence of black truffles, crafts a captivating harmony by artfully weaving together seasonal ingredients from both Japan and France.

Fresh black truffles are served in their pure form, or incorporated into sauces and coulis. Guests can savor a luxurious course meal where the truffle's charm is fully expressed through diverse cooking methods and styles in each dish.



The 30,000 yen course comprises a total of seven dishes: two appetizers, a fish course, a crustacean course, a meat course, cheese, and dessert.
A 26,000 yen course, excluding the crustacean dish, and a 23,500 yen course, excluding both the crustacean and cheese dishes, are also available, allowing guests to choose according to their preference.



Directly sourced from France, the black truffles exude an earthy aroma. We invite you to fully savor their mysterious and beautiful seasonal essence, presented through exquisite culinary creations.
