Located on the top floor of Tokyo Midtown Garden Terrace, "Philippe Mille Tokyo," a French restaurant, will offer "MENU SAKURA," a limited-time course that allows guests to experience spring with both their eyes and taste buds while gazing at the cherry blossoms below, starting Monday, March 15, 2021.

Japanese Spring: A Feast for the Senses
"Philippe Mille Tokyo" is the world's only restaurant bearing the name of Philippe Mille, the executive chef of the two-Michelin-starred restaurant "Le Parc" in the Champagne region of France.
This spring, a special limited-time course inspired by cherry blossoms will be offered.
Chef Philippe has a deep affection for Japanese culture and its beautiful nature. Although he could not visit Japan this spring, he visits every year during cherry blossom season to enjoy the country.
The "MENU SAKURA" course features dishes that use Japanese ingredients and express the inspiration drawn from the beautiful cherry blossoms of spring. Utilizing seasonal spring ingredients alongside the imagery of cherry blossoms, the dishes are crafted to be not only delicious but also visually stunning, evoking the feeling of spring.
The appetizer is a dish featuring Tasmanian salmon. The salmon is first smoked with cherry wood chips, then seared, and topped with generous amounts of caviar. At the center, seasonal celeriac and green peas are prepared as a salad with a blend of mayonnaise and mascarpone cheese.
The scattered pink hues of cherry blossoms are created using spiral beetroot and purple daikon, highlighting the natural sakura color of the vegetables. The colors and textures provide an accent, heralding the arrival of spring.
For the shrimp dish, succulent shrimp cooked at low temperature are paired with French white asparagus, which is in season during spring. They are served with a zabaglione sauce made by whisking egg yolks over a bain-marie and adding bisque sauce.
This course, enjoyed alongside the cherry blossoms viewed from Tokyo Midtown each year, offers a moment to savor the arrival of spring with both your eyes and your palate.
