On September 4th, "Restaurant Dominique Bouchet" opened, marking the first international venture for Dominique Bouchet, a popular chef who opened his restaurant in Paris's 8th arrondissement in 2004. The B1 floor features a cafe open for lunch and from 5 PM,Champagnetime, while the B2 floor offers a restaurant for lunch and dinner. The space, despite being in the basement, boasts an open atmosphere where you can savor new French cuisine that can't even be experienced in Paris.

Dominique, who openly declares Japan his "second homeland," opens his long-awaited establishment.

Born in 1952, Dominique Bouchet's talent was recognized by Joël Robuchon, under whom he worked closely. He later gained attention as a chef who earned Michelin stars at "Tour d'Argent" and "Hôtel de Crillon." In 2004, he opened his own small restaurant in Paris. Praised for its attentive hospitality and delicious, comforting cuisine based on traditional French cooking, it quickly garnered a reputation as a fine dining establishment.

Regarding this opening, Dominique Bouchet shared, "It's hard to believe that a decade has passed since we opened our restaurant in Paris's 8th arrondissement. Opening in Japan, a country I've cherished as my 'second homeland' for over 30 years, is truly a dream come true for me. I look forward to presenting my French cuisine, a new interpretation of classics beloved at our Paris location, infused with the inspiration of Japan's present moment."

The cuisine, the hospitality, and the warm atmosphere. The interior design is also noteworthy.

The B1 floor houses the "Dominique Room," a cafe featuring a counter table crafted from a single piece of American black walnut. The walls are adorned with 100 photographs, seemingly narrating Dominique's journey, creating a gallery-like space where one can relax casually from lunch through champagne time. Prime seats offering a view of the open restaurant are also available.

The recommended experience at the Dominique Room is the "Champagne Time" starting at 5 PM, offering a new style called "apéritif dînatoire" (aperitif time that doubles as a meal). Here, you can enjoy Dominique's beloved champagne alongside authentic tapas from the dining room. The appeal lies in its ability to offer a slightly luxurious time in a casual setting.

The interior concept for the B2 floor restaurant is "simple, chic, and a bright, warm space," according to Dominique Bouchet. The high ceilings and open atmosphere were conceived from Dominique's own ideas, creating a modern, sophisticated ambiance with natural wood tones and a lighting design that defies its basement location.

Adorning the walls is "Dancer," a piece created for this restaurant by Pierre-Marie Brisson, a close friend of Dominique. The painting imbues the entire space with a supple dynamism, reflecting Dominique's desire to "deliver cuisine with a comfortable rhythm."

In a space where Dominique seems to welcome you with "Welcome to my home!", savor a memorable dish.
