From March 14 (Thursday) to 17 (Sunday), a special four-day collaboration event, “-Four Hands- Chef Masakazu Hiraki×Chef Andrea Torre,” will be held at ARVA, the Italian restaurant at Aman Tokyo. The event features a collaboration between Italian chef Andrea Torre and Aman Tokyo’s Executive Chef Masakazu Hiraki.

Aperitivo Theme: "Breath of Spring"


ARVA, launched at Aman Tokyo in January last year, embodies Aman’s group-wide Italian cuisine concept. The concept, inspired by the history of Italian gastronomy—procuring seasonal ingredients and maintaining sustainable culinary principles—was conceived and brought to life by Italian chef Andrea Torre, who is featured in this event. He previously served at Aman Venice and Aman Shanghai, and currently holds the position of Executive Chef at Amanpulo in the Philippines.

For “-Four Hands- Chef Masakazu Hiraki×Chef Andrea Torre,” Torre and Hiraki collaborated on menu development. This is a rare opportunity to savor special Italian cuisine crafted by “four hands” in the kitchen of ARVA at Aman Tokyo.

The course begins with several aperitivi themed “Breath of Spring - Respiro di Primavera -.” Appetizers include a salad of puntarelle, a representative Roman vegetable, and zucchini flowers, followed by pasta with pecorino cheese, featuring artichokes, a key ingredient in Roman cuisine. These authentic Italian dishes are rooted in the culinary culture of Rome, Torre’s hometown and a city renowned for its leading restaurants.

Main courses feature sautéed wild turbot and saltimbocca, a traditional Roman dish where prosciutto enhances the savory depth of the meat. The menu also includes Maritozzo, a traditional brioche dating back to ancient Roman times, offering a taste of Rome’s rich flavors presented in an authentic yet refined style.

With 17 years of experience in Italy, Chef Hiraki expresses authentic flavors with a Japanese sensibility, while Chef Torre possesses deep knowledge of Roman cuisine. Together, they present a unique taste that captures the essence of spring, allowing the natural flavors of the ingredients to shine.
