Musashi by Aman Opens at Aman Tokyo
On Wednesday, October 17, 2018, Aman Tokyo opened its sushi restaurant, "Musashi by Aman." Welcoming Hiroyuki Musashi, a master who has dedicated over 30 years exclusively to Edomae sushi, the restaurant offers exquisite flavors born from evolved techniques and years of experience and intuition as a sushi chef.

Aman Tokyo, known for its warm hospitality reminiscent of a private residence and its luxurious, extraordinary experiences, welcomes "Musashi by Aman." The restaurant features Hiroyuki Musashi, the master chef from the renowned Aoyama restaurant "Sushi Musashi," beloved by fans both domestically and internationally for its refined Edomae sushi. Guests can indulge their five senses with Japan's proud sushi culture and masterful techniques, complemented by original tableware and a curated selection of sake and wine chosen to pair with sushi.
The sushi at "Musashi" is a testament to Hiroyuki Musashi's 33 years of experience as a sushi chef, reflected in his approach to ingredients. The sushi rice is prepared with an awareness of the distinct texture of each grain from the washing stage, cooked with moisture adjusted according to the season, temperature, and weather, and seasoned with a delicate balance of salt and vinegar.
For the toppings, the chef personally selects high-quality fish at the Tokyo Metropolitan Central Wholesale Market each morning. Simultaneously, freshly caught fish are flown in from various regions of Japan and stored at temperatures optimal for each type. For 'hikari-mono' (oily fish), the time for salting, rinsing, and marinating in vinegar is adjusted based on the fish's condition, freshness, and the day's temperature, ensuring meticulous preparation to best enjoy the fish on that particular day.
For tuna and white fish, the time from landing to arrival at Tsukiji is calculated, and considering the size, they are served at their peak ripeness. Experience flavors that are the result of an uncompromising dedication to "how to best enjoy sushi," within the sophisticated ambiance of Aman Tokyo.
