At "Breston Court Yukawatan," the main dining room of HOSHINO RESORTS' Karuizawa Hotel Bleston Court, the dish "Mushroom and Foie Gras Vessie," featuring wild mushrooms and foie gras, will be served from Saturday, September 15, 2018, to Friday, November 30, 2018.

Rich Aroma and Umami Concentrated Through Traditional French Cooking Methods





At "Breston Court Yukawatan," the main dining room of HOSHINO RESORTS' Karuizawa Hotel Bleston Court, the appetizer "Mushroom and Foie Gras Vessie," allowing guests to savor wild mushrooms and foie gras, will be served.

Vessie is a classic French culinary technique. Ingredients are placed inside a balloon-shaped vessie (pig's bladder), which is then floated in a pot and steamed in 60°C water for a set period. This slow cooking process seals in moisture and aroma, allowing the concentrated umami of the ingredients to be enjoyed.

When "Mushroom and Foie Gras Vessie" is cut open and served, a rich aroma of mushrooms and foie gras fills the air. The mushrooms were gathered by the chef and service staff, accompanied by Mr. Toru Nagayama, an expert in fungi.

This season, rare varieties such as the Japanese porcini, *Boletus edulis var. boudinii*, and *Lactarius hygrophoroides* will be served.
