Dominique Bouchet Tokyo, a French restaurant holding two Michelin stars, has opened "Le Grill Dominique Bouchet Kanazawa" in Kanazawa, Ishikawa Prefecture, following the opening of their bistro "Les Copains." The restaurant offers delicate French appetizers and sauces as its centerpiece, alongside select steaks.
In French cuisine, the chef responsible for creating sauces is called a SAUCIER. Sauces are an indispensable element of French cooking, recognized as a specialized field. At "Le Grill Dominique Bouchet," the sauces are characterized by their meticulous preparation and distinctive finish.

DOMINIQUE BOUCHET Profile
Born in the Charente region of France, he grew up surrounded by the abundant ingredients of nature. He began his culinary journey at the age of 13 and became Joël Robuchon's right-hand man at the opening of Concorde Lafayette in 1974. Subsequently, he served as head chef at "Jamin" (2 Michelin stars), "Tour d'Argent" (3 stars), and "Hôtel de Crillon" (2 stars) in Paris, leading the French gastronomy scene. In 2002, he was awarded the Légion d'honneur. In 2004, he went independent. As a new frontier, he opened "Dominique Bouchet," a small, exquisite hidden gem restaurant in the 8th arrondissement of Paris, where he could personally oversee every detail. As owner-chef, he welcomes guests from around the world. In 2013, he opened "Dominique Bouchet Tokyo" in Ginza 5-chome. It relocated and reopened in 1-chome in 2015. In 2016, he joined Relais & Châteaux.

Born in Saitama Prefecture. Started his career from 2009 to 2012 at the Marunouchi Hotel restaurant "Pomme d'Adam." He then moved to France and worked at "Dominique Bouchet" in Paris. Upon returning to Japan, he worked at "Pierre Gagnaire," and in 2015, was appointed Sous Chef at "Dominique Bouchet Tokyo." In 2016, he became Chef at "Les Copains de Dominique Bouchet." In 2017, he was appointed Chef at "Le Grill Dominique Bouchet Kanazawa."
