Salt by Luke Mangan, a Modern Australian restaurant in Tokyo's Shin-Marunouchi Building, has been renovated. The menu features vibrant dishes using ingredients from Australia, a country increasingly recognized for its culinary prowess. The adjacent wine bar, W.W World Wine, has also been revamped, offering a sophisticated space to fully savor your dining experience.

Wine Bar W.W World Wine Also Reopens
In recent years, Australia has garnered global attention as a culinary destination. This year, Melbourne, Australia, hosted "The World’s 50 Best Restaurants 2017." Surrounded by vast landscapes and pristine coastlines, Australia is a treasure trove of "clean & green" ingredients, renowned not only for their quality but also for their safety.
Salt by Luke Mangan, offering Modern Australian cuisine, and its adjacent wine bar, W.W World Wine, have now been renovated. It has been 10 years since Luke Mangan opened his first international restaurant in 2007. Looking ahead to the next decade, the restaurant aims to continue its role as an ambassador of Australian food culture, presenting "dishes that consistently evoke surprise and delight through cutting-edge, unique concepts" and delivering "Japanese-style hospitality."
The new "Signature Course ~Chef's Pairing~" offers a marriage of dishes with an added element. A small sip of a beverage (liquid) selected from the chef's unique perspective is served alongside each dish. Whether it's wine, tea, or soup, the chef has curated these pairings with their sensibility, choosing what they wish diners to experience with the food.
For the main course, the new "Grilled Grape-Fed Beef ~Reimagined Steak Pie~" is featured.
Grape-fed beef refers to long-grain fed cattle, specifically Angus-based breeds from New South Wales, raised on grain for over approximately 220 days. By incorporating grape pomace, a byproduct of winemaking, into their feed, the beef becomes exceptionally tender and rich in flavor.
