At "Rokuroku," the Edomae sushi restaurant within Grand Hyatt Tokyo, "Sushi-ya no Wadachi" opened in August. A menu for enjoying the long autumn nights has already been available since Saturday, September 1st.

A Feast of Autumn Delicacies
Grand Hyatt Tokyo, a dynamic luxury hotel standing tall amidst the hustle and bustle of Roppongi. "Sushi-ya no Wadachi," which opened on August 1st at Edomae sushi restaurant "Rokuroku," embodies both Edo tradition and modern open-air dining, inspired by the history of Edomae sushi being served at street stalls. It is a space where one can savor exquisite dishes crafted by skilled chefs using carefully selected ingredients.
At "Sushi-ya no Wadachi," the new autumn menu began on Saturday, September 1st. Highlights include "Matsutake Mushrooms Grilled Over Charcoal," where you can enjoy the crackling sound of Binchotan charcoal as you savor the aroma of autumn matsutake, and "Rokuroku Special Seafood Chijimi," a luxurious dish made with fresh sushi toppings directly from Tsukiji, such as Hokkaido sea urchin, sweet shrimp, squid, and scallops. Additionally, there are nigiri sushi of Hokkaido salmon roe and horse mackerel, which are only available in season and require utmost freshness, along with several types of "Hiyaoroshi" sake, perfectly paired with these autumn flavors, allowing guests to fully enjoy the deepening autumn.
