Ginza Kanade, with just 10 counter seats, has opened in Ginza 7-chome. It's a sophisticated establishment where one can enjoy the collaboration between "Champagne," registered as a UNESCO World Heritage site in 2015, and "Washoku" (Japanese cuisine), similarly recognized in 2013.

Flavors crafted for perfect pairings
As the name "Kanade" (meaning harmony) suggests, derived from the harmonious blend of Japanese cuisine and Champagne, the fusion of Japanese and Western styles is meticulously expressed not only in the pairings of Washoku and Champagne but also in the interior design and tableware.


From 6 PM to 9 PM, only a course menu is served, featuring an omakase selection priced at 10,000 yen (excluding tax and service charge). For an additional 10,000 yen, a pairing plan with four types (five glasses) of Champagne is available. The dishes are seasoned with Champagne pairings in mind, and the selected Champagnes are chosen for their compatibility with the food. It is truly a fusion of Japanese cuisine and Champagne. After 9 PM on weekdays, the bar time offers a selection of fine Champagnes like Krug and Perrier-Jouët by the glass for after-dinner enjoyment, making it an ideal spot for a "second stop."


The interior, illuminated by a chandelier inspired by Champagne bubbles, offers a private space with only 10 counter seats. Guests can savor the fusion of Japanese and Western aesthetics not only in the flavors but also in the tableware and ambiance, with dishes served on Wajima-lacquer plates and various patterns of Limoges porcelain. The owner-sommelier is Makoto Abe, a long-time proprietor of "Salon de Champagne Vionys" in Ginza and the recipient of the 2002 All Japan Excellent Sommelier title. Chef Tomoko Hirose, with over 20 years of industry experience, leads the kitchen. This establishment is a sophisticated hideaway where one can truly experience the confluence of Champagne and Japanese cuisine specialists.
