Shirokanedai is the new location for Unagi Fujita, a venerable establishment from Hamamatsu founded in 1892, which opened its doors on March 9th along Shirokane's Platinum Street. The unagi, savored in an intimate setting befitting a sophisticated hideaway, is exquisite.

The roots of Unagi Fujita trace back to around 1892, when the current fourth-generation owner, Masanori Fujita's great-grandfather, Kinzaburo, sold unagi caught in Lake Hamana to a restaurant in Iida City, Nagano Prefecture. This historic and renowned restaurant has now opened a new branch in Shirokanedai, offering a sophisticated hideaway. Guests can savor the time-honored flavors in an elegant environment.





Located along Shirokanedai's Platinum Street, the restaurant is a hidden gem, accessed via a discreet entrance leading up to the third floor. Stepping inside, guests are greeted by the captivating performance of unagi being grilled behind the counter, an entertaining setup that ensures every visit is engaging. It's the perfect setting to savor unagi at a leisurely pace, with six private counter seats and additional private rooms available.




Unagi Fujita's commitment lies in using the pristine well water of Hamamatsu and a unique "kashi-komi" process, where the unagi are kept in water for about a week without feeding to remove any gaminess and achieve a firm, elastic texture. The unagi are butterflied in the Kanto style, grilled lightly, steamed thoroughly, then dipped in a secret sauce perfected by the third generation, and finally grilled over Binchotan charcoal to infuse the flavor. The plumply grilled unagi is served atop lustrous white rice from Saku, Nagano Prefecture, accompanied by Hida sansho pepper. The combination of the juicy grilled unagi and the glossy rice is exquisite.

To ensure a relaxed experience while waiting for the unagi to be grilled, the tables are generously spaced and complemented by sophisticated interior design. Natural light streams in through the windows facing Platinum Street, allowing guests to enjoy unagi at a leisurely pace from lunchtime onwards. Beyond the unaju (eel over rice), the menu also features tamagoyaki (rolled omelet) made with unagi and a selection of Japanese sake for pairing, offering a diverse lineup.
