A Brick Wine Cellar Appears at the Center of the Restaurant


DOMINIQUE BOUCHET TOKYO Grand Reopening After Relocation


DOMINIQUE BOUCHET TOKYO, which closed for relocation last December, celebrated its grand reopening on July 27th in Ginza 1-chome. Currently, both lunch and dinner feature limited-time summer special courses.

The Theme: "Héritage = Inheritance"


The restaurant first opened in Ginza 5-chome in July 2013, earning two Michelin stars in just over four months. While the previous 5-chome location primarily used the basement for its main dining area, the new 1-chome premises house the restaurant on the second floor.

The new theme, "Héritage = Inheritance," is tackled by Dominique Bouchet and rising star chef Hajito Hajime. It embodies the concept of inheriting the "past" from predecessors, interpreting the "present" with current inspiration, and creating the "future" with Dominique's unique innovation.

A Space Designed for Privacy



The interior design evokes a Parisian apartment, symbolizing the "spirit of inheritance" that is central to the lives of many French people. The soft texture of natural wood and beautiful color tones blend with the modern, refined atmosphere of marble, creating a sophisticated and comfortable ambiance.

On the walls hangs "Dancer," a painting by Dominique's longtime friend, the artist Pierre-Marie Brisson, adding a supple dynamism to the entire space. Furthermore, warm gray partitions create a sense of privacy.

Both the lunch and dinner courses at DOMINIQUE BOUCHET TOKYO begin with a special menu crafted by the chef using the finest ingredients of the day (the dinner course is scheduled to change on August 24th). In addition to incorporating ingredients from Dominique's native Charente region of France, "revival menus" inspired by his time at "La Tour d'Argent" and "Hôtel de Crillon" will also be featured.

A Striking Brick Wine Cellar






The brick wine cellar at the center of the restaurant is one of the spaces to which Dominique dedicated the most passion. The cellar is equipped with tables, allowing guests to enjoy aperitifs, digestifs, and, upon request, even meals.

In addition to a curated wine list focusing on French selections, the lineup includes Pierre Mignon's "Dominique Bouchet Original Champagne," from a rare producer. Notably, a new Blanc de Blancs has been added to the existing Brut, Zero Dosage, and Rosé.

Adjacent to the kitchen, the "Private Dining Room," which can accommodate up to eight guests, can be used for various occasions such as special family meals, entertaining business partners, wine tastings, demonstrations, workshops, or ateliers. When Dominique is in Japan, custom orders for chef's tables and cooking classes are also possible.
