At "The Lounge by Aman," AMAN TOKYO's bar on the 33rd floor, "Evening Dessert by Aman" has launched, offering seasonal, bite-sized desserts paired with spirits, available from 9 PM. Chef de Pâtissier Yoshihisa Miyakawa's seasonal creations are designed to perfectly complement a nightcap.

Subtly Sweet: Three Exquisite Chocolates & Fruits
The Lounge by Aman, situated on the 33rd floor of AMAN TOKYO, is a bar offering a curated selection of cocktails crafted with Japanese ingredients, including eight types of martinis featuring Japanese botanicals, a mojito made with Japanese mint and domestic rum, and a Moscow Mule with Kochi ginger. They also boast an extensive collection of premium whiskies from around the world and a wide array of digestifs. The venue includes a spacious, dedicated cigar lounge where guests can savor premium cigars alongside their drinks.
Enjoy your after-dinner drinks at the bar counter, offering a stunning view of the illuminated Shinjuku skyline, or from the comfort of plush sofa seating. The current summer offering, "Evening Dessert by Aman," features three types of chocolate and four kinds of fruit, served in bite-sized portions. Paired with "Moët & Chandon Ice Impérial," a champagne served with ice, it promises to make your summer nights truly memorable.
Chef de Pâtissier Yoshihisa Miyakawa honed his skills through training in France before working at patisseries and luxury hotels in Tokyo. He is a past winner of the chocolate category at the "Japan Cake Show," considered the most prestigious pastry competition in Japan.
Miyakawa, whose expertise lies in chocolate, has prepared three distinct chocolate creations. The first is a red ganache made with fruit tomato jam and fromage blanc, and the second is a yellow ganache featuring peach-pineapple jam and black pepper; both offer a sophisticated, less-sweet taste balanced by the tartness of the jams. The third is AMAN TOKYO's signature chocolate, a blend of Ecuadorian and Madagascan cacao, offering a rich, bitter flavor.
The accompanying fruits – pear, mango, Kyoho grapes, and fig – are presented in both fresh and semi-dried textures, their natural sweetness and acidity enhancing the champagne's flavor.
