After graduating high school in 1987, author Shin Konno moved to the United States, honing his culinary skills while managing three restaurants in Los Angeles, California, before returning to Japan in 1996.
Following stints at Harajuku's cafe "Vajra" and Setagaya's bistro "Au Rendez-vous," Konno opened his long-desired bistro "Ugusu" in 2005. Supported by many wine enthusiasts, he opened his second establishment, "Organ," in 2011.
The book "The Exquisite Recipes of a Bistro Where Wine Tastes Unfailingly Delicious: 50 Signature Dishes from the Beloved Hidden Gems, Ugusu & Organ," released on March 23rd (Monday), features 50 recipes that Konno recalls as "particularly memorable" from the dishes his restaurants have served.
The recipe structure mirrors the restaurant's menu: "Appetizers from the Sea," "Appetizers from the Farm," "Appetizers from the Earth," "Main Courses," and "Desserts," offering a comprehensive selection. It generously shares recipes for signature dishes like "Seared Mackerel and Potato Plate" and "10-Vegetable and Couscous Salad," as well as approachable options such as "Sautéed Mushrooms" and "Gratin Dauphinois." Alongside the recipes, the book includes Konno's insights and essays on restaurant management, as well as explanations of recommended wines.
