This March, Keisuke Matsushima, owner and chef of Restaurant "I", released his book "French Cuisine in 10 Dishes". In celebration of its publication, Restaurant "I" is offering a special menu that recreates the regional dishes featured in the book.

Recreating Corsican Pork Dishes Rarely Seen in Japan





"French Cuisine in 10 Dishes" focuses on pork, an everyday ingredient in France. Through regional dishes from 10 representative French regions such as Provence, Bordeaux, and Normandy, the book gently unravels how this ingredient transforms, incorporating French history and culture.

It has been well-received for allowing even beginners to grasp the overall picture of French cuisine in an enjoyable way, making it a book that readers finish in one sitting.

At Restaurant "I", where Matsushima serves as owner and chef, a special limited-time menu is now available in response to numerous requests to "try the dishes from this book!". The dish recreated this time is the Corsican pork dish, "Pork Stuffed with Chestnut Flour Crepes". This will be a limited-time lunch-only menu for one month, starting May 12th (Monday).

Also available is a Corsican wine, "Corse Calvi – Cuvee Vignola Rouge 2010", which allows you to fully enjoy the "terroir" – the unique bond of land, history, culture, people, food, and wine of a region. We hope you will take this opportunity to savor Corsican cuisine, rarely encountered in Japan.
