Mikio Koda
Owner of LeVain, a bakery specializing in naturally leavened bread made with domestic wheat, and its cafe, Le Chalet. Born in Nagano Prefecture in 1949. After holding various jobs, including teaching, he learned traditional European bread-making techniques using natural leavening from a Frenchman.

We interviewed Mikio Koda.

LeVain's business purpose is not simply to make and sell bread.

He explained that it is to ensure everyone working there is healthy and full of smiles, and to share that joy with customers and everyone around them.

Money is a result, not the objective.
Therefore, he prioritizes satisfaction over sales...

LeVain is more of a family than an organization.

And it has continued for nearly 30 years.

The banana pie is delicious.

The banana pie I received as a gift was unadulterated deliciousness.

Work is like a backbone, essential for life.

Work means eating delicious food every day.

Neither delicious food nor healthy food can be created without diligent work.

It was a very comfortable time, with simple, unadorned words resonating in the air.
