Feature: Tottori Prefecture, a Culinary Haven | Hiroyuki Nozaki of "Buntokuyama" Looks to the Great Potential of Tottori's Ingredients Gallery

"I love broccoli. It's fun to think of various ways to cook it," says Mr. Nozaki.
Tottori Prefecture, where delicious ingredients are cultivated by leveraging its rich natural environment of sea, mountains, and countryside.
Mr. Nozaki has deep knowledge of Japanese cuisine and is also a prolific author.
Mr. Nozaki made roast beef using "Tottori Wagyu Olein 55," which is tender and rich in meaty flavor.
Nozaki's roast beef is made with the rump of "Tottori Wagyu Olein 55." After searing it in a pan, hot water is poured over it to remove excess fat and impurities. It is then steamed for about 10 minutes in a pan with a sauce made of soy sauce, sake, and green onions.
"Daisen Broccoli Kirakira Midori" is characterized by its lack of bitterness or astringency, and can even be eaten raw.
"Tottori Wagyu Olein 55," a new brand focusing on the quality and mellowness of its fat, with particular attention to the content of oleic acid, the main component of olive oil.
Tottori Prefecture pioneered selling broccoli with its leaves still attached, a testament to its commitment to freshness, which is a key characteristic.
Mr. Nozaki interviewed in the kitchen.
Mr. Nozaki, who says, "My relationship with Tottori ingredients goes back over 30 years."
"Daisen Broccoli Kirakira Midori" is cultivated, as its name suggests, in the black soil unique to Mt. Daisen, the highest peak in the Chugoku region, which has low density and thus high permeability.
The interview took place at the main branch of "Buntokuyama" in Minami-Azabu.
On this day, when cherry blossoms were in full bloom throughout Tokyo, spring had also arrived at "Buntokuyama."
