TOKYO PREMIUM BAKERIES | Vol. 8: DANDELION Chocolate Gallery

Dandizen | The "Shokupan OE15" is baked with 15% organic Italian olive oil and water, resulting in a moist and soft texture. Its moderate chewiness and light texture make it ideal for sandwiches. Scheduled bake time: 10:00 AM. ¥310 per loaf.
Dandizen | "Corsica," shaped like a small gift, is a bread baked with prunes from Corsica, France, and clementine cream, enhanced with Armagnac (brandy). It's wrapped in dough and baked with diced prunes. No sugar added. Scheduled bake time: 10:30 AM. ¥180 per piece.
Dandizen | There are four types of "Shokupan" (bread): "BL30" with 30% butter and milk, "BL20" with 20% butter and water, "OE15" with 15% olive oil and water, and "S100" made with 100% soy milk. Each type has its own dedicated fans.
Dandizen | The glass-enclosed kitchen is impeccably clean. The staff work with efficient, silent movements, and it's a pleasure just to watch their skillful hands.
Dandizen | "Capra" is a scone made with sprouted whole wheat flour and kibi sugar. It features a firm texture and the fragrant aroma of whole wheat. Lightly toasting it in a toaster oven is recommended. Scheduled bake time: 10:00 AM. ¥270 for two.
Dandizen | While quiet in demeanor, the owner couple are deeply passionate about bread making. Chef Kimura constantly experiments with new menu items. "Continuing for a long time and passing it on is important," he says.
Dandizen | With delicate yet bold movements, he shapes one loaf after another. His strong, large hands are particularly striking.
Dandizen | From right: Owner Hida, Chef Kimura, and Sales Manager Mori. "We're the best team, able to say anything to each other," says Hida.
Dandizen | Natural light streams into the basement kitchen from the staircase side of the approach. You can glimpse the staff working briskly in the clean space.
Dandizen | The building features tall glass windows and pale pink walls. Descending the stairs next to a small sign reveals the bakery.
