<strong>Kizuna / Main (Meat)</strong><br>Pigeons, symbolizing couples. A dish expressing the journey of life enjoyed together, like a married couple. Premium French pigeon, tender and mild, is grilled over charcoal, infused with the aroma of fig leaf oil, which carries the flower meaning "fruitful love." It's served with choro-gi, an auspicious root symbolizing longevity. The thigh meat is accented with chrysanthemum puree, garnished with nutrient-rich black garlic and pistachios. The two thigh pieces are tied with a red thread, representing marital harmony.

<strong>Couple / Warm Appetizer</strong><br>Expressing the joy of sharing a meal from matching couple's bowls. This dish features seasonal milt (shirako) prepared as a meunière, served in auspiciously paired, yet distinctively sized, couple's bowls. It's said that cod milt, or shirako, is an auspicious ingredient in Japan, associated with the phrase "taraphuku taberareru" (to eat one's fill).

<strong>Miracle Encounter / Main (Fish)</strong><br>Representing the miracle born from the encounter of two individuals (two ingredients) from different backgrounds. The "sea essence," the concentrated umami from slowly cooked cod, is blended with the "mountain essence" of olive, a tree symbolizing couples, to create an emulsified (connected) sauce. Experience the surprise of distant ingredients transforming into a new sauce through loving, meticulous preparation. Served with cauliflower on one side and broccoli on the other, with romanesco—a hybrid of the two—adorning both plates, symbolizing the new discoveries born from their combination.

<strong>Passage of Time / Cold Appetizer</strong><br>The contrast in colors, gradually shifting from light to deep green, represents the deepening love of a couple over time. The exquisite salmon marinade is scattered with countless chips, colored green with herbs. The two plates transition from light green chips to dark green, symbolizing the evolution from the initial tender feelings of meeting to the profound love built over time. The salmon's homing instinct also signifies the enduring connection between the couple, even when apart.
