The World's Finest Flavors Converge in Las Vegas (2) | Feature Gallery

Sage, which opened in 2006
McLean, a highly acclaimed chef, received the James Beard Foundation Award for Best Chef in 2006, often called the "Oscars of the culinary world."
Sage, characterized by its chic interior, is located on the first floor of the ARIA Resort & Casino.
Since its opening, the signature dish "Foie Gras Custard" has remained unchanged.

The wine list features a selection primarily from California, renowned for its fine wines.
Seafood is sourced directly from contracted fishermen. This dish, "Vancouver Island Kushi Oysters," uses oysters delivered from Vancouver, Canada.
In 2013, McLean opened "Five50," a casual dining spot offering pizza and craft beer, within the same ARIA Resort & Casino.
"Poached Artichoke," an appetizer with a punchy flavor from Iberian pork and vinaigrette sauce.
"King Crab and Citrus," an appetizer with a refreshing citrus acidity.
The signature dish "Foie Gras Custard
Another signature dish, "Beecher’s Farm Whey Fed Pork Loin," uses pork loin from contracted farms.
"36 Hour Wagyu Short Rib," featuring wagyu beef, which is regaining popularity in Vegas.
"Pacific Red Snapper," a dish made with red snapper, a type of sea bream.
"Handpressed Juices," made with fresh fruits and vegetables pressed by hand.
"Baker’s Batch," a selection of freshly baked pastries including donuts, croissants, and muffins.
"Sweet Tots" ($7). The sauce is an aioli made with smoked paprika, allowing you to fully savor the sweetness of the sweet potato.
One of the popular dishes, "Belgian Waffle" ($13), is served with lavender-infused mascarpone cheese and a compote of strawberries and rhubarb.
"Kale Caesar" ($16). The bitterness of kale transforms into a savory flavor when paired with the lemon and parmesan dressing.
The menu also features a variety of egg dishes. Pictured is an omelet generously filled with locally sourced vegetables.
"Tomato Salad" ($15) with beautiful heirloom tomatoes in various colors.
"Smoky Wings" ($14). When the lid is lifted, chicken wings emerge from the smoke.
Coffee is also a specialty. "Coffees of The Word" ($12) features hand-picked beans from contracted farms in Kenya, Guatemala, Ethiopia, El Salvador, and Colombia, brewed at your table by a barista.
Wolffra says, "The beauty of farm-to-table is the human connection. That's all there is to it. The producers I've worked with for years are like family."

Della’s Kitchen, with its cozy, log-cabin-like ambiance
Located in Delano, Della’s Kitchen serves breakfast and lunch made with fresh local ingredients from 6:30 AM to 2:00 PM.
Next, we visited "Canyon Ranch Grill" at The Venetian Las Vegas.
Canyon Ranch Grill is part of a resort complex that includes fitness and spa facilities.
From the lunch menu, "Mongolian BBQ Salmon" ($23), featuring grilled organic salmon served with brown rice and vegetables.
