Belgian premium gourmet brand Callebaut will launch new products featuring Ruby chocolate this autumn.
Barry Callebaut has developed ruby chocolate as a fourth category of chocolate, following dark, milk, and white.
It will launch this autumn.
Since its unveiling in Shanghai in September 2017, ruby chocolate has garnered significant global attention. Now, it will be fully introduced to Japan as the new product "RB1".
"RB1" is the first ruby chocolate developed by Callebaut, a premium Belgian gourmet brand, for chocolatiers and pâtissiers.
Chefs Hironobu Tsujiguchi and Susumu Koyama, two leading pâtissiers in East and West Japan who also presented recipes using ruby chocolate at the new product launch event, commented: "The natural ruby hue's beauty inspires endless possibilities, and the industry recognizes its value. We want to explore the inherent characteristics of ruby chocolate" (Chef Tsujiguchi), and "When I first learned about it, my immediate thought was 'I want to see and taste it as soon as possible!' It truly piqued my interest. I believe it pairs wonderfully with coffee and rosé champagne" (Chef Koyama).
The product is scheduled to launch on Rakuten Ichiba this autumn, with advance reservations beginning on Thursday, July 19th.
