The oil is made using only olives that have ripened from a banana-green to banana-yellow hue, with hints of peach, from the Morrut variety cultivated on the company's own farm in Tortosa, Tarragona Province, Catalonia, northeastern Spain, a region renowned as the world's leading olive-producing area.

To ensure quality, company staff travel from Japan to oversee the harvest and pressing process each year. The oil is not bottled on-site but is transported in bulk from the Port of Barcelona to the Port of Kobe. After rigorous quality inspections at the company's Ushimado, Okayama headquarters factory, each bottle is carefully filled.

Harvested and pressed within 8 hours for a fresh, fruity, and mellow taste.

The Morrut variety is a rare cultivar native to the Tortosa region along the Ebro River, known for its fruity aroma and gentle sweetness. While olives are typically pressed within 24 hours of harvest, this product undergoes pressing within a strict eight-hour window to prevent oxidation. This rapid process from harvest to pressing enhances the Morrut's distinct flavor, resulting in a mellow, fruity taste with the sweetness of green apples and the freshness of young grass.
