From Sydney, the all-day casual dining restaurant "bills" will offer its "Very Berry Pancakes w/ Berry Butter," a limited-time recipe previously exclusive to its second Japanese location, "bills Yokohama Red Brick Warehouse," from Saturday, February 17th to Sunday, March 25th.
For this limited-time recipe, the fruit topping has been changed to strawberries only.
Shiso (murame), matcha, and pistachios are newly arranged in a balanced way, creating a visually appealing dish.
The refreshing tartness of the strawberries is complemented by the nutty, mellow sweetness of the pistachios, while the shiso (murame) acts as a subtle spice, tightening the overall flavor profile for a more profound taste experience.
The pancake batter and the homemade berry butter, into which berries are kneaded, remain unchanged, as does the maple syrup recipe. The menu will be offered throughout this period as a way to best enjoy the berries.

Additionally, the dish's design draws inspiration from "microgreens," a growing food trend overseas.
"Microgreens" is a collective term for young leafy vegetables such as sprouts, herbs, and murame, and they are highly regarded internationally as exceptionally nutritious ingredients.
