Tori-guchi opens in Gotanda, offering a full chicken course featuring meticulously sourced local fowl

Yakitori specialist Tori-guchi will open in Gotanda on March 26th.

The concept is "Yakitori + (Plus)".

Enjoy a course menu that includes not only classic yakitori but also thoughtfully conceived chicken dishes.

The head chef is Kazuki Nishiguchi, who trained at Toriyoshi, a perpetually popular yakitori restaurant in Nakameguro.

After many years of rigorous training at Toriyoshi, which has produced numerous acclaimed chefs including those from Torishiki, Nishiguchi is now opening Tori-guchi and embarking on his independent career.

This master, who carries the strong DNA of Toriyoshi, finally steps into the spotlight.

His honed skills in butchering, skewering, and grilling, along with his deep affection for yakitori, are evident in every skewer.

The main chicken used is Daisen Jidori from Tottori Prefecture and Tanmi Jidori from Shiga Prefecture, both of which Nishiguchi personally selected after visiting the producers. The charcoal, essential for yakitori, is "Tosa Binchotan," a special charcoal Nishiguchi discovered through years of research.

In addition to yakitori, the menu features unique side dishes such as "Bottarga and Poached Egg" and "Pickled Chicken," alongside a curated selection of sake and wine from its sister establishments: the junmai sake specialist Soregashi and the wine restaurant LOVAT.

To conclude the exquisite yakitori course, enjoy a seasonal shaved ice dessert made with generous amounts of seasonal fruit.

In March, the "Kiwi and Yogurt Shaved Ice" will be served, offering a delightful balance of the kiwi's subtle tartness and the mild creaminess of yogurt.
