On this evening, a distinguished group convened in a private room, the Chef's Table, at "The French Kitchen," located on the second floor of "Grand Hyatt Tokyo." This exclusive space, featuring a stunning kitchen by the cutting-edge German manufacturer Bulthaup, is where the chef crafts bespoke dishes for guests. The attendees included LOUIS XIII ambassadors and individuals with the special role of communicating the cognac's appeal, such as President Tanaka of Remy Cointreau Japan.
LOUIS XIII is, without question, a cognac of the highest quality, born from eaux-de-vie aged between 40 and 100 years. Its aroma and taste are unparalleled, a truly unique spirit. However, the ambassadors' role extends beyond simply proclaiming LOUIS XIII as a superb cognac. The culinary artistry was presented by David Brandin, Executive Chef of "Grand Hyatt Tokyo" and a LOUIS XIII ambassador. To perfectly complement the enjoyment of LOUIS XIII, he transformed the finest ingredients, sourced from across Japan and France, into exquisite French dishes.
To enhance LOUIS XIII as a digestif, providing the perfect lingering finish to the meal, the dishes were paired with Piper-Heidsieck Champagne, specifically their "Rare Millésime." This exceptional blend is crafted only from wines of particularly good harvest years. Following the 2002, 1998, and 1988 vintages, the main course featured the 1979 vintage, which, after more than 30 years, transcends the definition of Champagne with its rich aroma and profound flavor.
