"Raw Blue Cheese Cake" is a new brand from Operation Factory, a company that manages and produces cafes and restaurants. Producer Takahiro Ichikawa, who has brought hits like the fresh cream specialty store "Milk" and the Japanese tea milk tea specialty store "Ochaba," spent six months from concept to completion.
"Raw Blue Cheese Cake" generously uses Gorgonzola cheese, aged for over 100 days, known for its rich flavor and stimulating aroma. Furthermore, by using carefully selected ingredients such as lemon and rock salt, and thoroughly researching the blend ratios and baking methods, we have achieved a mellow, melt-in-your-mouth "raw" texture with an aromatic finish that lingers in the mouth.
The way to enjoy it is also unique to this adult cheesecake. Its subtle sweetness and saltiness are enhanced by drizzling with honey or pairing with fruit. You can also enjoy a variety of pairings, such as with prosciutto and wine.
