After repeated refinements, they arrived at the ultimate "rich sea urchin soup." The best part is, there's absolutely no sea urchin odor! Seafood can sometimes change its aroma when heated, right? Like the briny smell becoming more pronounced. However, this soup retains the rich umami of the sea urchin without altering its scent, and it's amazing how they haven't masked the flavor with thickeners.
The soup arrives frozen and is meant to be used undiluted. If the broth reduces while heating, add a little water. This allows you to easily recreate a professional-quality dish at home with minimal effort.
The regular set (for two people) includes 8 snow crab legs. The deluxe set (for four people) comes with 16 legs. The crab is incredibly fresh and plump! We recommend preparing pork belly, mushrooms, and aromatic vegetables yourself to enjoy with it.
Yes, cilantro is surprisingly delicious. Prepare a generous amount. Also, mizuna. Both vegetables, from crisp to wilted, are quickly scooped up and savored. The fibrous texture of the refreshing vegetables blends with the sea urchin flavor, creating an exceptional combination.
The perfect accompaniment to the hot pot is, of course, sake. Let's go with a rich and fruity daiginjo. It will enhance the umami of the sea urchin, making it spread even further. Sake at home. It's the best!
And for the finale, zosui (rice porridge). Udon is also an option. You could even add heavy cream and use it as a pasta sauce. Make sure to savor every last drop of the soup.
