Game dishes are a delicacy best enjoyed in this season. In Nagano Prefecture, hunting is permitted from around autumn, and deer, wild boar, and wild rabbits are available in the Karuizawa area. "Wild Rabbit Royale," a special dish once reserved for royalty, makes its appearance at "Bleston Court Yukawatan," the main dining room of Hoshinoya Karuizawa Hotel Bleston Court, utilizing these exquisite local ingredients.
"Yukawatan," a secluded restaurant nestled in the forest, focuses on local Shinshu vegetables, meats, wild plants, and river fish, pursuing a unique French cuisine experience found nowhere else. During this period, the "Pâté de Roi" appetizer and the "Wild Rabbit Royale" main meat dish, from the nine-course dinner, will be presented as "Wild Rabbit Royale." Both "Roi" and "Royale" mean "king" in French, and these two dishes were once special delicacies for French royalty.
The "Pâté de Roi" is a dish made from a mixture of over four types of game, including venison, wild boar, and wild pigeon, along with truffles, foie gras, and fruits, baked within a pastry crust. It is served at the table in the shape of an intricately crafted royal crown and carved in front of the guests. The layered cross-section is beautiful, showcasing a harmonious blend of various ingredients that allow diners to savor the distinct flavors of different game meats.
The main dish, "Wild Rabbit Royale," is a testament to the essence of French cuisine and is considered the pinnacle of classic French game dishes due to its complexity. It features wild rabbit meat wrapped around foie gras and truffles, slow-cooked to melting tenderness, and coated in a rich, aromatic red wine sauce—a dish designed to be savored for its profound umami and fragrance.
The "Pâté de Roi" requires about two hours to bake the pastry, while the "Wild Rabbit Royale" is simmered with aromatic vegetables and wine, then left to rest for a day to allow the flavors to meld.
