Michiko Hosaka Leads the "Measuring Food and Life" Workshop

For the "Measuring Food and Life" workshop, instructor Michiko Hosaka recommends "things made in harmony with the principles of nature."

Hosaka states, "In our daily lives, we are constantly making choices. What we eat, what we wear, where we go, what we read, who we spend time with, and so on. The accumulation of these choices creates our daily lives, and I believe that at their foundation lies the desire for the kind of life we want to live and how we want to live it. However, in today's world, with abundant information and choices, the criteria for our selections may unconsciously shift from ourselves to external factors. I hope this workshop will serve as one guide for those choices."

The Theme for the Fourth Session: Vegetables

"In recent years, information about vegetables has been increasing at an accelerating pace. First came terms like 'organic,' then 'fertilizer-free cultivation' and 'natural farming.' Furthermore, there are heirloom varieties, F1 hybrids, traditional vegetables, and so on. Before you know it, there's a plethora of keywords to help us choose vegetables. But no matter how much information there is, if we ourselves lack the criteria, we'll just be swayed by the information and end up not knowing what to choose," says Hosaka.

In the fourth workshop, we will join the traveling greengrocers, Mikotoya, as special guests to create a "measuring tool for easily choosing vegetables."

You'll encounter the real stories behind vegetables, as seen through the eyes of Mikotoya, who travels the country selecting them, and learn tips for choosing vegetables through tasting.

Traveling Greengrocers, Mikotoya
A select shop for delicious vegetables, focusing on naturally grown produce. Based out of an old camper van called the "Mikotoya-go," they journey from north to south, visiting farms. What kind of farmers, in what fields, with what aspirations, and how do they grow their crops? With the motto "Crops reflect character," they select vegetables that they have personally vetted with their own eyes, palates, and senses. At other times, they travel from east to west for festivals and events. They continue their "vegetable-centric" journeys in the Mikotoya-go, selling fresh juices and soups, offering catering, and hosting workshops to enjoy vegetables.
