Frédéric Cassel, whose atelier is based in Fontainebleau, France, has opened a shop in the expanded and renovated Ginza Mitsukoshi B2F.

Frédéric Cassel's First Patisserie in Japan Arrives



At the newly opened "Desserts et Thé" on the second basement floor of Ginza Mitsukoshi, Cassel's cakes, for which he is highly regarded as a pâtissier, are making their debut alongside chocolates and macarons, centered around the theme of "marriage with tea." The world of Cassel, the chocolatier and pâtissier, can be fully savored, including the Éclair Chocolat and other chocolate-based cakes.

Frédéric Cassel's appeal lies not only in his chocolates, which use high-quality couverture (chocolate processed for confectionery use according to international standards) to express French esprit and romance, but also in his highly acclaimed skills as a pâtissier. In particular, the "Millefeuille Vanille" (756 yen) is Cassel's signature pastry, which was crowned "Best Millefeuille" in the Île-de-France region, including Paris, in 2010. The exquisite balance between the caramelized puff pastry and the smooth vanilla cream is a testament to his mastery.

To commemorate the opening at Ginza Mitsukoshi and the "Best Millefeuille" award, the "Desserts et Thé" concept, which proposes pairings with tea, will feature the Millefeuille Vanille with Harrods tea. Furthermore, the September fruit cake is "Confluence" using pears, and from October onwards, a "Monthly Fruit Cake" will be offered in a tea pairing.
