EAT | Enjoying Food Like a Jazz "Live Session"
A Cafe & Epicerie Produced by Blue Note Japan Opens!
This spring, "WATERRAS," a mixed-use facility in Kanda Awajicho, Tokyo, will celebrate its grand opening. On April 12 (Friday), "cafe 104.5," a cafe & epicerie embodying "live feeling" produced by Blue Note Japan, will be born here.

Music, Space, and Food. Expressing the Sympathy of the Moment Through Cuisine
"cafe 104.5" embodies the "live feeling" of the long-established live house, Blue Note Tokyo. The chef is Takahisa Nagasawa, Senior Chef of the Blue Note Tokyo Group, who has gained extensive experience in various restaurants, including the three-Michelin-starred "La Côte d'Or," and across Europe. Chef Nagasawa, who has experienced French culinary culture firsthand, offers a menu of casual yet sophisticated cafe fare.
Precious ingredients such as "Wapork Mochibuta" pork, which suits Japanese palates, and "Yamasagoshi Beef" from Niigata are served in various styles, including house-made charcuterie, plancha, and open-roast. Furthermore, special olive oil infused with lemon, rosemary, and pepper, along with house-made original sauces, are available at the table, allowing guests to arrange their dishes to their mood and preference, much like enjoying a jazz "live session."
In line with the commercial facility's name "WATERRAS" (meaning "Japanese terrace"), new menu items have been created through a fusion with Japanese elements. These include the "Maruta Roll" (from 660 yen), a novel roll cake made with dough using "Kodawari Tamago" eggs produced with carefully selected feed and breeding environments, paired with red bean paste and cream cheese, and garnished with seasonal fruits and Japanese ingredients. Other offerings include "Iron Plate Okowa / Madame NORIMATSU, Dressed with Ume" (780 yen) and "Curry Udon / CHIKARA" (980 yen).
The drink menu features "104.5 Ale," an original beer by Kiuchi Brewery, the producer of "Hitachino Nest Beer," which has won numerous domestic craft beer awards. It also includes seven types of domestic and international craft beers, sake from Hiroshima's "Takedsuru Brewery," wines, bourbons, brandies, and various soft drinks.
"At cafe104.5, we want to express the importance of the atmosphere created in the moment, which can only be born from live performances, through our food. We want our customers to enjoy music from around the world.──We aim to express the sympathy of such moments through our cuisine," says Nagasawa with enthusiasm.

Takahisa NAGASAWA
Born in 1965. Moved to France in 1991. Gained experience at renowned establishments across France, from the three-Michelin-starred "La Côte d'Or" to brasseries and cafes. After returning to Japan, he became the chef at "Adding Blue," a French restaurant in Minami-Aoyama, Minato-ku, attracting many fans with its concept of "everyday dining." In 2013, he was appointed Senior Chef of the Blue Note Tokyo Group. In recent years, he has deepened his relationships with close friends Patrick Gautié and Christian Le Squer (Ludoyc), Eric Trochon (MOF), and others, drawing inspiration from their cuisine and lifestyles.
