A Colorful Menu That Evokes the Arrival of Spring!
From "Armani \/ Ristorante," an Italian restaurant where you can experience Giorgio Armani's aesthetic with all five senses, comes a new spring menu. As spring arrives, ingredients awaken and beautifully adorn pristine white plates, likened to canvases.

Dishes to Simply Enjoy the Spring of Japan and Italy
In the luxurious space unique to Armani, culinary advisor Enrico Derflingher, who became the youngest head chef of the British Royal Family and has served as White House Executive Chef and private chef to the late Princess Diana, crafts the seasonal dishes. "Armani \/ Ristorante" offers the opportunity to fully savor his creations.
The Spring 2013 menu, themed "Fresh Green," expresses the arrival of spring with ingredients that have awakened after the harsh winter, such as green vegetables that have begun to sprout. Each plate is a representation of this awakening. We have created dishes that leave a lasting impression, allowing guests to slowly savor the essence of the ingredients, evoking an Italian spring with ingredients harvested in Japan.
The menu offers a variety of options, including three-course lunch and dinner courses, as well as a diverse à la carte selection. Highlights include dishes like "Orecchiette flavored with shrimp, sakura shrimp, and nanohana" from the lunch course "ASSAGGI," which features green ingredients as accents. Other notable dishes include "Steamed Botan Shrimp with Artichoke, White Beans, and Lemon Oil" from the lunch course "PRIMAVERA," and "Tilefish Carpaccio with Taggiasca Olive Paste, Bottarga, and Saffron Sauce from the River Po" from the dinner course "Giorgio Armani's Beloved Menu." These vibrant dishes capture the essence of spring flavors.
Culinary advisor Enrico Derflingher commented, "I've incorporated a lot of the color green, which Italians eagerly await with the arrival of spring. I hope guests will feel the gentle Italian spring through the presence of beans, reminiscent of classic dishes, and the vibrant green accents throughout."
