Shangri-La Tokyo's Italian restaurant, Piacere, is hosting Marco Stabile, owner and chef of Florence's Michelin one-star Ristorante Ora d'Aria. He will collaborate with Piacere's Head Chef Paolo Pelosi for "A Modern Tuscan Culinary Collaboration Between Two Chefs," running from Monday, July 30th to Sunday, August 5th.

Savor Neo-Italian Cuisine Evolved in Tokyo and Florence



Piacere, the Italian restaurant at Shangri-La Tokyo, offers a creative "Neo-Italian" cuisine that respects Tuscan traditions while remaining simple and modern. Head Chef Paolo Pelosi, having spent a year in the kitchen at Ora d'Aria, has now realized a collaboration with the restaurant's owner and chef, Marco Stabile, who also champions "Neo-Italian" cuisine.


Marco Stabile is currently one of Florence's most talked-about chefs. After gaining experience in numerous fine dining establishments across Italy, he opened Ora d'Aria in 2005. He is renowned for his commitment to using high-quality local ingredients and for his modern presentations that, while honoring tradition, maximize the essence of each ingredient, captivating gourmands.

Modern Tuscan Culinary Collaboration 03

For this collaboration, the chefs will focus on premium ingredients from Italy and Japan. The dinner course will feature dishes like Marco Stabile's signature "Poached Egg with Tomato and Bottarga" and "Tortelli of Beef Tripe with Butter Aroma, Sage, and Anchovy." Paolo Pelosi will present creations such as "Porcini Flambé with Cherry and Parmesan Salad and Bitter Chocolate Sauce." Guests can enjoy vibrant, mutually inspired Italian dishes that delight both the eyes and the palate. Additionally, a weekend lunch course on August 4th (Saturday) and 5th (Sunday) will include unlimited sparkling wine from Gaderbosch.


These two chefs, reuniting in Tokyo, the world's largest culinary metropolis, present their take on modern Tuscan cuisine. We invite you to savor this collaboration of "Neo-Italian" cuisine, evolved separately in Tokyo and Florence.
