This is the third installment of recipes taught by Rajaa Chbani in Morocco.Part 1, Part 2 we learned recipes for juices and salads, and this time we spoke with her about vegetarian and raw food.

Living food: the best and richest source of essential nutrients for the body!


MunemiYou are also a vegetarian, and as a nutritionist, you teach raw food classes. What are your reasons for recommending vegetarian and raw food?

RajaaThere are various reasons, but first and foremost, cooked meals are acidic.

Misconceptions about protein - meat and dairy
① Cooking destroys amino acids essential for bodily and brain function.
② Casein, the milk protein found in milk, is linked to cancer at a higher rate than tobacco causes lung cancer.
③ Meat acidifies the body and leaves fat.

Vitamins
① Vitamins are components of cells; they are the body itself.
② Vitamins are destroyed or denatured and deactivated at cooking temperatures above 42 degrees Celsius.
③ Oxygen and enzymes are necessary for vitamins to be absorbed by cells. Enzymes are also destroyed by heating above 42 degrees Celsius.

Minerals and trace elements
① Minerals and trace elements promote the electrical stimulation necessary for information exchange between cells.

Living food is the best and richest source of these essential components for the body. Seaweed, freshwater algae, and dark green vegetables are highest in minerals and trace elements.

Try eating the following foods raw and in their pure form.


Kelp, Dulce (red algae), Arame, Hijiki, Freshwater algae

Oxygen
The oxygen contained in food is essential for nutrient absorption and hemoglobin proliferation. Oxygen is the most important element for us; we cannot live more than 7 minutes without it.

① Oxygen regulates metabolism.
② Oxygen stimulates hemoglobin in red blood cells.
③ Oxygen is a key factor in the absorption of all nutrients.

Phytochemicals
Biochemical substances naturally present in raw plants. These phytochemicals are uniquely designed by nature to protect the body from disease.

Various raw vegetables, fruits, and sprouts are effective against many diseases. The sulfate found in broccoli sprouts is highly effective in destroying cancer cells. The following foods are particularly good as they contain the highest levels of phytochemicals.

RajaaLiving food is all natural fruits, seeds, seafood, and vegetables (uncooked, unrefined, or unprocessed). These foods also have high nutritional vibrations.

MunemiFinally, some people worry that a vegetarian diet may not provide enough protein. What foods are rich in protein?

RajaaSprouts and seeds are rich in high-quality protein. Complete proteins (foods containing essential amino acids) are abundant in the following "easy-to-prepare," easily digestible, and nutrient-rich foods.

<Reflections on the interview>
I eat seafood, but I often eat vegetarian and have reduced my meat intake. After hearing your talk this time, I felt that I want to actively incorporate raw food (including juices) into my diet going forward.
In Japan, we have the saying "ishoku dōgen" (food and medicine are of the same origin), and Rajaa's words this time made me realize this even more deeply. The next time I go to Morocco, I would definitely like to attend her raw food workshop.

Rajaa Chbani
Born and lives in Marrakech, Morocco. Obtained a Doctor of Chemistry degree from University Paul Sabatier in Toulouse, France, in 1980. Established a pharmacy and laboratory in Marrakech, Morocco, in 1983. Continued to earn degrees in Nutritionist dietician homeopathy from the same university in France (1986). Studied Ayurvedic diet in India in 1999 and macrobiotics in Switzerland in 2001. Qualified as a Phyto-aromatherapist in France in 2005, followed by further specialization in Raw living food at the Hippocrates Health Institute in Florida (USA) in 2006.
Since 1996, she has actively participated in workshops and conferences in France, India, and Morocco on homeopathic medicine, aromatherapy, health, eco-cooking, and creative raw food. She has served as president of the Marrakech Homeopathic Association since 1997 and founded the Maghrebio Association (organic agriculture and organic food) in 1999.
In addition to aromatherapy workshops, she also holds weekly raw food workshops in Marrakech.
