As part of my research, I wanted to visit a place where traditional herbal remedies are still practiced, so I went to Morocco last year.

Recipes from Rajaa, Pharmacist, Aromatherapist, and Nutritionist


What was meant to be a one-time visit turned into two trips to Morocco. Before my first trip, a friend of an acquaintance in Marrakech, who is a pharmacist, found me the contact for Rajaa, who runs a pharmacy there. They suggested, “She’s also a pharmacist for the royal family and knows everything about Moroccan plants and herbs, so why don’t you meet her?” That’s how it all began.

She is not only a pharmacist but also an aromatherapist and a nutritionist, taking a holistic approach to her patients' health by preparing prescriptions and providing dietary guidance. I had the opportunity to meet her recently when she was staying in New York, and this time, I asked her for recipes for juices and salads that provide balanced nutrition, as well as her insights on healthy eating.

In this first installment, I will introduce two recipes for enzyme-rich, nutrient-packed juices.

<Juice Recipe (Serves 2)>
Detox - Juice to cleanse the kidneys

・3-4 medium carrots
・1 apple
・1 beet
・1 large cucumber
・2 kale leaves
・1 piece of ginger, slightly larger than your thumb
Garnish with sunflower sprouts

A revitalizing juice perfect for the morning
・2 teaspoons almonds soaked overnight in water
・3-4 medium carrots
・1 apple
・1 fennel bulb
・2 kale leaves
・1 piece of ginger, slightly larger than your thumb
Garnish with sunflower sprouts


Vegetable Efficacy Notes


According to Rajaa, carrots are a “magic vegetable,” rich in vitamins, minerals, and enzymes. They are good for the entire digestive system, lower cholesterol, and are said to be effective in preventing sunburn due to vitamin A, providing high antioxidant effects with vitamin E, and containing abundant essential fatty acids, potentially preventing cancer.

Sunflower sprouts are said to boost immunity and help with hair loss. Sprouts, not just sunflower sprouts, but all young sprouts (like radish sprouts, bean sprouts, broccoli sprouts, etc.) are “Living Food,” truly alive ingredients, exceptionally rich in vitamins, minerals, protein, fiber, essential fatty acids, and antioxidants. They help expel toxins from an acidic body and restore alkalinity. Beets enhance immunity, activate red blood cells, and facilitate oxygen intake into the body.

Rajaa Chbani
Born and lives in Marrakech, Morocco. Obtained her Doctorate of Chemistry in 1980 from the University Paul Sabatier in Toulouse, France. In 1983, she established a pharmacy and laboratory in Marrakech, Morocco. She continued to earn degrees in Nutritionist Dietetics and Homeopathy from the same university in France (1986). In 1999, she studied Ayurvedic diet in India, and in 2001, macrobiotics in Switzerland. In 2005, she qualified as a Phyto-Aromatherapist in France, and in 2006, she further specialized in Raw Living Food at the Hippocrates Health Institute in Florida (USA).
Since 1996, she has actively participated in workshops and conferences on homeopathic medicine, aromatherapy, health, eco-cooking, and creative raw food in countries including France, India, and Morocco. Since 1997, she has served as the President of the Marrakech Homeopathic Association, and in 1999, she founded the Maghrebio Association (for organic agriculture and organic food).
In addition to aromatherapy workshops, she also holds weekly raw food workshops in Marrakech.
