Avant-garde Cuisine Focused on "Surprise and Emotion"
In 1964, elBulli opened in the coastal town of Cala Montjoi in Spain's Catalonia region. The restaurant's name derives from "Bulli," the breed of French bulldog owned by the original owner. Ferran Adrià joined elBulli as a cook in 1984 and became the head chef within just three years. In 1990, Adrià began co-managing the restaurant with Juli Soler, a veteran manager, introducing innovative cuisine in both appearance and taste to the world.
Their motto was: "Cuisine must not be copied." To that end, they discarded all previous recipes and cookbooks, creating elBulli's original recipes from scratch. They continuously developed menus that fused cuisine with conceptual art, transcending mere taste. Ferran Adrià constantly pursued "surprise and emotion" in his cooking to offer customers novel sensory experiences.
elBulli's 1,846 Dishes That Revolutionized the Culinary World
The creative spirit of the chef team led by Ferran Adrià elevated ingredients into works of art through novel cooking methods, highlighting the artistic dimension of cuisine. They created a total of 1,846 dishes, revolutionizing the culinary world. The exhibition showcases the kitchen and research laboratory, the inner workings of elBulli, through photographs and videos. It also features a wide array of items related to elBulli, including research materials (hand-drawn sketches and notes), plastic models of dishes (dummies used to confirm color, size, and placement), elBulli's custom cookware, photographs of finished dishes, and clippings of restaurant reviews and articles. The true pleasure of this exhibition lies in experiencing cuisine not just through taste, but also visually.
