Onikuyake Keisuke Sananbo Hiroo, a restaurant specializing in Takamori Wagyu, has launched its new Ultimate San-nan-bo Rice bowl this month for a limited time. This exquisite dish features a sublime collaboration of the renowned Takamori Wagyu from Yamaguchi Prefecture and black truffle, which is currently in season.

The "Ultimate San-nan-bo Rice" is a masterpiece: truffle butter pilaf is topped with fluffy scrambled eggs, followed by the finest Takamori Wagyu of the day, all drizzled with a special truffle soy sauce.
The Takamori Wagyu served at this restaurant is a rare breed, known as a "phantom" wagyu, with only 150 heads distributed annually. Its lineage traces back to the Meiji era in Iwakuni City, Yamaguchi Prefecture, upholding a long-standing tradition.
Its quality is recognized as top-class in Japan, having received the "Fat Quality Award" at the National Wagyu Competition, an event held every five years.
Raised in a rich natural environment on original feed blended with rice flour and the lees of "Dassai" sake—famous for exclusively producing Junmai Daiginjo for over 100 years—along with high-quality natural water, this wagyu develops a fat quality rich in oleic acid. Its meat is characterized by a mellow aroma, exceptionally fine texture, and a subtle yet profound sweetness and richness.
Furthermore, its fat has a lower melting point compared to other black wagyu breeds, resulting in a melt-in-your-mouth texture. The smooth fat is not overpowering, making it enjoyable even for those who typically find wagyu fat too rich.
